The department lists three grades. Sp. Grade I has 12% moisture and at most 4% light berries, and is dark black with surface grooves. Grade I has 14% moisture and at most 4% light berries. FAQ has 14% moisture and at most 10% light berries. Pepper is used as a spice and flavouring in the food industry, and for pepper oil and oleoresin.
